Ingredients:
- 2 cans of 10 count pillsbury buttermilk biscuits (I used the Publix version)
- Pepperoni slices - at least 40
- block of cheese - I like cabot sharp white cheddar
- 1 egg, beaten
- parmesan cheese
- italian seasoning & garlic powder
- pizza sauce
So Jerome was on Facebook the other evening and came across this recipe….not only was he oogling over it, but he took a screen shot of the directions and emailed it to me. Suffice to say I think he wanted me to make it, so I did tonight :)

Tonight was one of those nights that I was sitting there, looking at the thawing chicken, and thinking “what the heck am I gonna do with this?”. I was scouring through my Cuisine Magazines (thank you, Dad for the continued subscription!) and found this wicked simple recipe. Made some cous cous and frozen peas and what a dinnah!!! Nutritional info below
Nutrition per serving: 224cal; 8g total fat; 1g sat fat; 68mg chol; 77mg sodium, 9g carbs; 27g protein. (add 1 cup Near East Cous Cous and 2/3 cup frozen green peas and your calorie count for the whole meal is: 514!!!) So I really like Tilapia, but I typically fall back on cooking it the same way over and over again…and frankly I was looking for something to snazz it up! Tonight, after doing some more wedding crafty things and cleaning the house, I began to peruse Pinterest…always a dangerous hobby. I found this recipe for blackened grilled tilapia, and I decided to test it out. The results were happily gobbled up by both Jerome and I - and we paired it with cous cous and a side salad.
Ingredients: 2 tilapia 1 tbsp paprika 1/2 tsp onion powder 1 tsp ground red pepper 1 tsp salt 1 tsp garlic powder (I didnt have garlic powder, so I used my garlic pepper 1 tsp lemon pepper 1 tsp italian seasoning 1/4 c butter (half a stick) ~ combine all of the dry ingredients in a small bowl; melt the butter. On a dinner plate, lay the fish and then pour the butter over it…turn once or twice to coat. Sprinkle half the dry mixture over the fish, turn the fish over and spread the rest. I cooked our fish on our grill veggie tray with tinfoil, but you can also grill it right on the grill (I just didn’t want the clean up frankly!). Make sure to heat up your grill for about 5 minutes on high before you put the fish on; grill on each side for about 3-4 minutes…or until done. So one of my colleagues made a comment about his favorite cookies, and so I decided to make them (yes I was bored). here they are…

I am trying to get more fruits into our regualr routine, and found this creative way to both add bananas but also hit my sweet tooth…little banana sandwiches! Very simple to make with 3 ingredients: bananas, peanut butter, and mini chocolate chips. I cut the bananas up, layered half on one side with PB, then sprinkled some chips on the PB. Smush another banana slice on top and voila!
SO I had planned to cook a meal on Wednesday night, and then we had a business partner outting. Then on Thursday night Jerome had drinks with someone looking for career help/development. After our ‘debrief’ on Friday night, I KNEW I could not let the pork loins that I had in the fridge wait any longer! I started loooking through my Cuisine magazines and Pintrest for some simple and quick ideas…this is what I came up with. Yes both my main dish and my side include parmesan cheese, but one can’t go wrong with cheese :)
