Ingredients - for 2 people:
1 tbsp each sugar & salt
1 lb shrimp - peeled & deveined (I got the medium Mayport Shrimp from Safe Harbor)
1/8 cup each EVOO and parsley
1/2 tbsp lemon zest
1-2 cloves of garlic, freshly minced
1/4 tsp freshly ground black pepper
~~ in a bowl, add the sugar and salt...add the shrimp and gently coat. Chill in he fridge fort about 45 minutes. Afterwards, rinse the shrimp well and dry the bowl; return the shrimp to the bowl. Add the other ingredients to the bowl and mix to coat. Thread shrimp onto metal skewers. Using a Griddler (or a real grill if wanted), turn to high heat. Add the skewers and cook on each side for a total of 5-6 minutes. I paired it with a yummy salad...great for the calorie count!
