Ingredients (small pizza...like for 2 people...or a really hungry person!)
* 2 oz. goat cheese
* 1 tbsp. milk - I use 1%
* 2 tsp. fresh tarragon...I have some French tarragon in my garden courtesy of Jared & Kate (you rock btw)
* 1/2+ tsp. organic honey
* 1/2 tsp fresh lemon zest
* 1/2+ tsp. fresh minced garlic (I used more as I love garlic!)
* pizza dough...you can make your own or do what I did...buy the dough from the store - Publix whole grain is awesome! I used 1/2...
* 1 tsp. EVOO
* 1+ cup shredded rotisserie chicken. I cooked my own chicken, but you can pick up a cooked one at the store!
* 2/3 cup fresh spinach - baby
* 1/2 cup shallots, diced
* 1/4 cup Kalamata olives, diced
* 1/4 cup roasted red peppers, diced
* shredded mozzarella...amount of your discretion :)
Directions:
~ Mix goat cheese, milk, tarragon, honey, lemon zest, and garlic in a small bowl. It helps if the goat cheese is room temp!
~ turn oven to 500 degrees. Take pizza dough (again, only 1/2 if you bought it at Publix) and stretch to desired pizza size. Place on baking stone and cook in oven for about 4 minutes.
~ mix all of the other ingredients together, with a little bit of EVOO as desired, in a medium bowl.
~ Remove the dough from the oven, brush with EVOO, then spread the goat cheese mix over the pizza. Take the rest of the ingredients and top off the pizza...have fun with it!
~ Bake for about 5-7 minutes, depending on your desired 'brown-ness'. Remove, cut, and devour! :)
