Ingredients:
* 3-4 tomatoes - I used Florida Tasti-Le
* 1 wedge brie, rind removed (next time I will use 2 for this amount!)
* 3/4-1 cup fresh basil
* 2-3 cloves garlic, finely chopped
* 3/4 cup EVOO
* S&P
* 1 box linguine (a 16 oz box)
* Chicken - I sautéed some chicken tenders in EVOO and S&P beforehand)
~~ Put tomatoes, garlic & basil in a bowl with S&P and EVOO; mix together and let marinate...the longer the better. Then put the brie in the freezer for 10-15 minutes, then cut the rind off. Chop up the brie and add to the bowl. Cook the pasta; toss the hot pasta and cooked chicken into the mix. The hot pasta will melt the brie. Toss everything once the cheese is melted and enjoy this delish dish!
PS this makes a TON...at least for 6 people!
