(PS modified from averiecooks.com - check out her site!)
Ingredients (feeds 3-6 people depending on your appetite!)
* 3 large sweet potatoes
* 1 jar Trader Joe's Cowboy Caviar (note it is spicy) - or any black bean chunky salsa
* cheddar cheese...I don't know how much I used but it was probably a lot :)
* 1 ripe avocado
* salt
* 1/3+ cup light sour cream
* 1 1/2 tbsp. lime juice
* scrub the potatoes, then poke holes (I used a fork)...then throw in the microwave for about 10-12 minutes (all of them together)
* pull out your cuisanart or like-machine, blending smooth the avocado, sour cream, lime juice, and salt. Note it makes a lot!
* Shred the cheddar
* turn on the broiler
* once the potatoes are down (and cooled just a bit!) cut them lengthwise.
* Scoop a little out of the middle of each, where all the other ingredients will go. I just moved all the scooped out potato to make higher 'walls' to hold in the caviar
* put the caviar in the middle of the potatoes, cover with cheddar, and broil for about 3+ minutes.
* serve with the avocado crema on the side. I tried to be creative and drizzle it on top, but it looks really bad...so no pictures of THAT! :)
PPS...One whole potato - with all the goodies - is about 380 calories!
