Ingredients
2 apples (mine were Fuji)
1/3 cup sugar
1 egg
2 tsp cinnamon
1/4 tsp all spice
Juice from one lemon
Dash of salt
4 tbsp flour
Wonton or egg roll wraps
1 tbsp butter, melted
Cinnamon sugar
I wanted to make a low (ish) carb dessert, and since it technically is fall, apple pies were on my mind! Here is a cute way to make an apple dessert…and it’s pretty easy!

After a good workout at the gym and a walk with Hayley, we were starving! We took some of the fresh grouper (from Safe Harbor…there’s a plug!) and I made this easy recipe, paired with a side salad & poppyseed dressing! All in all for 306 calories :)
Ingredients: 1/2 tbsp EVOO mayo 1/2 lemon - squeezed for juice 1.5 tbsp softened butter Dash (or so) of Tabasco Salt & pepper to taste 1/4 cup parmesan 2 grouper fillets Spray a baking sheet with some EVOO spray and place the grouper on it. Squeeze the lemon juice over the fish. Broil the fish for about 6 minutes. While its broiling, mix together all of the other ingredients. Remove the fish from the other and brush the cheese mix on top. Put back in oven for about 3-4 minutes. That’s it!!! Tonight is the Notre Dame game, so I wanted to make a yummy meal for Jerome while he cheered on his team :). Enjoy…and go ND!
Ingredients 1 tbsp cornstarch 2 tbsp cool water Carrots (I had baby carrots & cut in half) 1/2 large onion - chopped finely Red potatoes, quartered 1 beef roast (mine was labeled pot roast…you can use chuck roast) 1/2 cup (or so) beef stock (H2O if you don’t have stock on hand) 2 tbsp Worcestershire sauce Salt & pepper to taste Directions Mix together the cornstarch & H2O & put in crock pot. Add in veggies and salt and pepper; then on top put on beef….season more as desired. Add in stock and Worcestershire sauce on top of meat. Cook on high for about 5+ hours (or low 10 hrs). Yummmmm Tonight I decided to spend a little more time cooking…fancy-ish! There are lots of steps in this one, but totally worth it :)
~Ingredients for chicken: 3 chicken breasts (sliced in half lengthwise for thinner cuts) 1/2 cup flour, with S&P to taste 2 egg whites, beaten 4 tbsp EVOO ~ ingredients for sauce: 1 tbsp EVOO 1/4 cup minced onion 1 tbsp flour 3/4 cup low sodium chicken broth 1/2 cup white wine 1/4 cup fresh lemon juice 1 tbsp butter 2 tbsp chopped parsley, divided 1 lemon, finely sliced I made an “oldie but goodie” from Aunt Joy’s kitchen! Very easy marinade to make, and perfect for the grill!
Marinade (makes enough for 2-3 fillets) 2 tbsp soy sauce - low sodium preferred 2 tbsp white wine (PG used here) 2 tbsp sugar Garlic: I used two cloves minced 1 tsp ginger ~ mix together and add in salmon - can marinate for a few hours. Grill & serve with a fresh salad for a healthy meal! |
