Ingredients:
* 8 oz. sour cream
* 3/4 cup sugar
* 1 egg
* 2 tbsp. flour
* 1 tsp vanilla extract
* 1/4 tsp salt
* 2 1/2 cups blueberries
* 1 unbaked pastry shell
For the streusel:
* 3 tbsp. flour
* 2 tbsp. sugar
* 3 tbsp. butter
* 3 tbsp. chopped pecans
Directions
~ Preheat the oven to 400 degrees.
~ Combine all the ingredients up through the salt in a large bowl until all are smooth; fold in blueberries. Add the mix to the pastry shell (I rolled mine out and used a fork to make the crust indentations). Bake the pie for 25 minutes.
~ While the pie is baking, combine the streusel ingredients in a small bowl, until the mix is crumbly. Once the pie is out of the oven, sprinkle the streusel over the top and bake for an additional 15 minutes or until the crust is browned.
~ Cool for at least 2-3 hrs before serving
