Ingredients:
2 chicken breasts
4 cups rice
1 can reduced sodium black beans
3/4 cup frozen yellow corn
1/2 cup salsa
1 cup shredded cheddar cheese
1 cup plain Greek yogurt
Directions:
1. Grill/sauté chicken while cooking rice according to directions.
2. Add all ingredients to a large bowl and mix well. Transfer to an oven safe dish and cover with foil until ready to bake. I topped it with a little more shredded cheese for a gooey factor!
3. Bake at 350 for 20-25 minutes.
