Ingredients:
- Italian sausages, casing removed. I used mild ones since I was making this for a few people including Ava, but spicy would have been yummy too!
- 2 cup chopped peppers
- 2 cups chicken brother
- 1 cup salsa
- 3/4 tsp salt and 1 pinch pepper (I think I used more as I love flavor...and I think I included some cumin and garlic)
- 1 cup white rice, rinsed (not cooked)
- 1 cup+ shredded mozzarella cheese
- In a large pan, I used my dutch oven, brown the sausage over medium high heat, adding in the peppers after the meat is browned - cook for additional 5 minutes
- add broth to the pan to deglaze, then adding in the salsa and spices
- Add rinsed rice to the mix, stir well, and simmer (covered) for about 20 minutes, or until the rice is cooked
- sprinkle with cheese or wait to sprinkle until served in bowls) and wait a min or two until the cheese has melted!
