Ingredients:
- 8 slices of bacon
- ~ 1 lb pork tenderloin
- 2 tbsp honey
- Salt & Pepper
- 1-2 tbsp EVOO
Directions:
- Lay the bacon out on a cutting board, in preparation for the pork. I ensured the bacon overlapped just a bit. Also turn on your oven to 375 degrees
- Turn on your stove to medium high heat and use a pan that can be put into the oven; I used my cast iron pan. Once it is hot, add in the oil. Season the pork with S&P, and then sear the pork for about 1 or 2 minutes...just enough to turn the outside white but not crisping it up
- Wrap the pork with the bacon, making sure the seam is on the bottom
- This is where you can go ahead and cook it right away OR wrap it in tinfoil and cook later on!
- Put the wrapped pork back in the cast iron pan and drizzle with honey.
- Cook the pork for a total of 35-45 minutes, taking out every 10-15 minutes to baste the meat with the honey/glaze.
- I wanted the bacon to be a little crispy, so I turned it to broil for about 2 minutes at the end - totally your choice :)
- Let rest for about 10 minutes, and then cut into thick slices...I cut along the bacon so each piece was still wrapped.
