And lets take a moment to address something: lowfat/nonfat cheese is not something I will use. Period. I mean if I am going to eat cheese... it will be REAL cheese. I’ll just run a few extra miles :)
I was able to prep this earlier in the day so when I was entertaining later, I didn't have to be in the kitchen and away from the conversation. Definitely a lowkey/easy meal to make with tons of flavor.
Ingredients:
* 2 large boneless chicken breasts
* 8 oz cream cheese, softened to room temperature
* 2 cups+ spinach (I used baby spinach)
* 1 tbsp. EVOO
* 4 oz shredded mozzarella cheese
For the marinade:
* 3 garlic cloves, minced
* 1 tbsp. EVOO
* 1/2 tsp rep pepper flakes (I used a bit more as I wanted a kick)
* 1/2 tsp Italian seasoning
* S& P to taste
Directions:
~ in a gallon bag, combine all of the marinade ingredients. Cut the chicken breasts horizontally (so that they are thin), shaking the bag to ensure the ingredients mix together. Set aside for 15 minutes at least
~ In a large skillet, wilt the spinach with 1 tablespoon of oil, then set aside to cool
~ Pull the chicken out of the marinade and arrange the chicken in the baking dish. Spread the cream cheese on each of the pieces, then layer the spinach on top and then the mozzarella on top.
~ Bake the chicken for about 20-30 minutes at 400 degrees...you can pair it with rice, veggies, or just about anything!
