Ingredients:
* 1+ cup smooth Peanut Butter
* 2 Tbsp butter, softened
* 1/2 cup brown sugar
* 1+ cup confectioner sugar
* 1-2 boxes of semi-sweet chocolate bars
* Pretzel Crisps
Directions
* Mix together the PB, butter, and sugars in a mixer/Kitchen Aid...I suggest warming the PB a little (20 seconds or so) to make the mixture bind better.
* Once combined well together, make little 1" balls of the crumbly mixture and squish between two pretzel crisps - if you are like me, you'll need to be careful to not break the crisps in the process!
* To melt the chocolate, use a double boiler. If you don't have one, do what I did: put water in a sauce pan and a metal (or glass) mixing bowl on top. I put the heat on about medium to heat up the water and the bowl, and then turned down to low once I began adding the chocolate.
* Once all the chocolate is melted, dip your PB pretzel sandwiches! I used the chocolate like 'glue' to hold together any of the crisps that I by accident broke.
* I used baking racks covered with tinfoil, and put these into the fridge to firm up the chocolate. You can use cookie sheets or parchment paper instead...whatever you have in the house that will work for letting the chocolate solidify!
