Ingredients:
* 1 Spaghetti Squash
* 2+ cloves garlic
* Parsley
* 2-3 tbsp butter
* Parmesan cheese - amount to your liking
~ Turn the oven on to 375. Pierce the squash with a knife several times to allow steam to vent out. In a shallow baking dish (I used a 8x8 pan) bake the squash for about 60 minutes, and then let sit for about 10 minutes. Once it is cool enough, cut lengthwise; scoop out the seeds from the squash. With a fork, scrape the squash innards into strands...put in a bowl and set aside for a bit!
In a pan, turn heat to medium/medium-high and add the butter and garlic...sauté until golden. Add in the parsley, cheese (sprinkle a bit in), and squash and mix together. Reduce heat and let cook another minute or two so that the squash softens. Add more butter/cheese if needed or wanted (plus salt if desired). I served it with grilled thin-cut pork chops (boneless).
