Ingredients:
1 pie shell (you are more than welcome to make your own, but this is easy!)
2/3 cup sugar
2 eggs
2 ounces unsweetened chocolate, melted
1 tsp vanilla
1/3 cup softened butter
2/3 cup heavy whipping cream
2 tsp confectioners sugar
Whipped cream and chocolate curls optional
~ line pie shell with tinfoil & bake for about 5 minutes...remove foil and bake for another 2+ minutes or until the crust is golden brown.
~ In a sauce pan, combine the sugar & eggs until well blended; cook over low heat stirring frequently until the mixture thickens (coats the back of a spoon).
~ Stir in chocolate & vanilla until entire mixture is smooth. Remove from heat - keep on stove as you want it lukewarm
~ In a small/medium bowl, cream the butter and then add the chocolate mixture...beat on HIGH until smooth and fluffy
~ In another larger bowl, beat the cream until it starts thickening; then add in confectioners sugar. Fold in the chocolate mixture.
~ Pour the large mixture into the pie shell and make sure to chill for at least 6-8 hrs. Garnish with whipped cream and chocolate curls and serve!
