1 tsp butter
1/2+ cup chopped pecans
1 tbsp. maple syrup (it's gotta be the real stuff!)
1 tsp kosher salt divided
1/2 cup apple jelly
1/4 cup shallots, minced
2 tbsp. white balsamic vinegar
1/4 cup greek yogurt (I used vanilla, but plain works too)
2 tbsp. oil - again your choice, but I used EVOO
1/2-1 big bunch of kale
1 cup halved red grapes
1 apple (I had an envy apple on hand)
Black pepper - to taste
Directions:
* Heat butter in a skillet over medium heat. Add in the pecans and maple syrup until coated thoroughly and browning; remove from the pan and salt with half of the salt
* In a small saucepan, melt the jelly over medium heat. Once melted, add in the shallots, balsamic and the rest of the salt. Simmer for a minute or two, then remove to cool in a bowl (I put mine in the fridge for a few minutes to speed up the cooling process).
* Once the jelly mixture is cooled, mix in the yogurt, oil and pepper to taste
* Toss the kale/apples/grapes/pecans with the dressing - enjoy!!!!
