Ingredients:
4 chicken breasts
1 tbsp oregano
2+ cloves garlic, minced
1+ cup marinara
1 egg
1 cup ricotta (not the skim kind!)
1/4 to 1/2 cup shredded parm
shredded mozzarella - your desired amount!
1 tbsp thyme
4 tbsp basil, chopped
S&P to taste
EVOO
1. Preheat the oven to 375 and coat a 9x13 pan (I used my EVOO spray)
2. In a large bowl, mix together the oregano, S&P, garlic, and a bit of EVOO. Cut a 'pocket' in the chicken breasts (lengthwise for the stuffing) & then add to bowl; make sure to rub in the seasonings to the chicken breasts...hands are best for this!
3. In a small bowl, mix together the egg, ricotta, parm, thyme, S&P to taste, and 2 tbsp basil. Once thoroughly combined, stuff the marinated chicken breasts with the cheese mixture and lay in the baking dish. Spoon the marinara over the chicken, and then cover the pan with tinfoil.
4. Bake the chicken for about 25 minutes. Remove the tinfoil, sprinkle desired amount of mozzarella on each and put back in the oven for about 2-5 minutes...basically to get that cheese melted and bubbly! When serving, use the rest of the basil for garnish.
