Ingredients
1 cup graham cracker crumbs (NOTE: they sell the crumbs now so no manual mashing!)
SUGAR - 3/4 cup and on the side, 2 tbsp additionally
3 tbsp butter..next time i would use a bit more to bind the crumbs better
3 packages of cream cheese (not light!)
1 tsp vanilla
3 eggs
Cupcake tins & liners
Heat the oven to 325 degrees
Combine the graham cracker crumbs, 2 tbsp sugar and butter in a small bowl; then press into the cupcake liners (in the tins)
Beat the cream cheese, vanilla, and 3/4 cup sugar until well blended; add the eggs one by one until well blended together
Spoon the mixture over the crusts and bake for about 25+ minutes
* Blueberries, fresh lemon zest...on top of Whipped Cream
* Strawberries & fresh mint...on top of a thin layer of strawberry jam
* Milk Chocolate cream cheese spread and coconut flakes...with whipped cream
* I also was going to do mango/coconut...but I ran out of time!
