Ingredients:
* 2 cups orzo (prepared as on the box. note this amount will feed the Russian Army, so you might want to halve the recipe!)
* 1 large ripe tomato, seeded & diced - I used about 20 cherry tomatoes from my garden instead
* 1 English cucumber, diced
* 1/4 cup fresh parsley, chopped - I didn't have any this time :(
* 1/4 cup fresh mint, chopped
* 2 tsp freshly grated lemon zest
~ For the dressing:
* 3 tbsp lemon juice (I used the juice from the lemon I zested
* 1 clove garlic, diced
* 3 tbsp EVOO
* 1 tsp freshly grated lemon zest
* salt & pepper to taste
~~~ Cook the orzo according to the directions, and then drain & cool (at least 20-30 minutes). In a large bowl, combine the orzo and the other ingredients and mix. Then mix/whisk together the dressing ingredients and pour over the orzo mix; toss together until all is coated well.
