Anyhow, I had some shrimp in my freezer that I wanted to use, and I found some angel hair pasta in the pantry. So here's what I made...
Ingredients:
* 1 lb shrimp (I didn't get mine peeled & deveined...mental note for next time as this took me some time to do!)
* 1 tbsp. EACH butter and EVOO
* 2-3 cloved garlic (depending on your taste), chopped finely
* 1/4 cup white wine, or use chicken broth if you prefer
* S&P to taste
* Red pepper flakes...to taste. I added a lot!
* Lemon juice (1/2 lemon if fresh) or a few dashes from the bottle
* Chopped Parsley - fresh is best!
* Pasta - I used Angel Hair but linguine or spaghetti works well too...enough for 3-4 people
Directions:
Cook the pasta according to the directions on the box. Note: this recipe for the shrimp is very fast, so start the pasta before!!!!
Melt the butter and EVOO in a large sauté pan, and then add in the garlic; cook for a couple of minutes until the garlic is fragrant. Add in the wine (or broth), S&P, and red pepper and bring back to a simmer.
Let the liquid reduce to about half, and then throw in the shrimp. Saute the shrimp until they turn pink, which is about 3 minutes. Stir in the lemon juice and parsley, and then serve over pasta. I like to mix everything before plating, so I added the shrimp mix to the drained pot f pasta...your choice!
