2 peppers
2 tbsp. EVOO
1 tsp cumin
1/2 tsp oregano
2 cloves garlic
2 can dices tomatoes
a handful of baby carrots, diced
1 zucchini, diced
1/2-3/4 lb. ground turkey
I worked from home today, and I pulled out some lean ground turkey from the freezer…with absolutely no idea of what I would do with it! I looked online at some recipes and made my own variation of stuffed peppers…mainly because I didn’t have all the ingredients :) and it turned out really good - and there are no carbs involved!!!!! 2 peppers 2 tbsp. EVOO 1 tsp cumin 1/2 tsp oregano 2 cloves garlic 2 can dices tomatoes a handful of baby carrots, diced 1 zucchini, diced 1/2-3/4 lb. ground turkey ~ cut the peppers in half and place in a 8x8 baking pan, face down. bake on 350 for 15 minutes. in the meantime, brown the turkey. remove the turkey from the pan, and sauté the carrots, zucchini, and garlic with spices and EVOO. Add back in the turkey and mix in the tomatoes. Take the peppers out of the oven, and add in the mixture. Sprinkle some parm on top as desired (I only did this for peppers as it’s still no-cheese for me!). Bake for another 12 minutes and then enjoy!!!!!!
