Ingredients:
- 1 cup dry orzo
- 3 cups arugula
- 1/4 cup crumbled feta cheese (more is okay too!)
- 1 tablespoon olive oil
- 3 peppers – I got red, yellow and green!
- Salt & Pepper to taste
- Preheat oven to 400°. Cook the orzo according to the directions on the package; drain and then put back into the pot. Add arugula, feta, oil, and S&P to the orzo and stir. I kept the pan on the burner but had turned it off.
- Keeping your peppers whole, cut the stem and seeds out. Sprinkle some salt and pepper inside the peppers if desired. Fill peppers with the orzo mixture and place the peppers into a baking dish…I used a bread pan as my peppers all fit!
- Cover with foil (leave instructions for hubby optional!)
- Bake until peppers are tender (35-40 minutes).
