Tonight is Jerome’s late night, so I decided to make a dinner using as many veggies as possible. I ended up making Baked Zucchini Chips and Baked Tomatoes Stuffed with Chicken Salad…for a meal under 500 calories. This is definitely something I will make again!!!
Zucchini Chips (makes 3-4 servings, each 99 calories)
Ingredients:
- 1 large zucchini, cut thin with mandolin….about 1/8”
- ½ cup Italian breadcrumbs
- 1/3 cup parmesan cheese
- ½ teaspoon black pepper
- Kosher or sea salt to taste
- ¼ teaspoon garlic powder
- ¼ teaspoon cayenne pepper
- 5 tablespoons nonfat organic milk
