4 oz feta
8 oz ricotta (I used part skim)
1/2 cup chopped fresh basil
1/2 cup finely chopped tomatoes
1 de-seeded jalapeño - minced
Dash of oregano, garlic salt, pepper (and any other spice you want!)
3/4 cup tomato sauce
~ combine feta, ricotta, basil, spices, tomatoes and jalapeños in a small bowl. Spoon a generous portion onto each chicken breast and then fold over the chicken. Top off each breast with leftover cheese mixture and tomato sauce. Bake uncovered at 350 for 35 minutes!
