* 1/3 cup EVOO
* 1/4 cup pine nuts (I didn't toast mine, but some people like the smokey flavor)
* 2 garlic cloves
* 1/4 tsp sea salt
* 3+ cups fresh basil leaves
* 1/4 cup+ freshly grated parmesan cheese
~ put the basil, pine nuts, garlic, and salt into your food processor; slowly drizzle in the oil until blended. Remove the mixture - I put mine into a bowl - and stir in the parmesan cheese...I added a little bit more than 1/4 cup (I love my parmesan grater!!). You can freeze the pesto if desired - I am going to use some of it and then freeze the rest in little 1 oz. containers for individual use :)
