Ingredients:
- 2-3 large chicken breasts (I had 3 since I was cooking for 5 people & wanted leftovers)
- 8 oz. cream cheese, softened
- 2+ cups spinach
- 1 tbsp. EVOO
- 4+ oz. mozzarella
Marinade
- 3+ cloves garlic, minced...I always use a bit more!
- 1 tbsp. EVOO
- 1 tsp. Red Pepper Flakes - use your spice level discretion
- 1/2 tsp. italian seasoning
- Salt & Pepper to taste
Instructions
- Cut chicken horizontally so you have 4-6 thin chicken breasts, then place the chicken and the marinade ingredients in a gallon bag...mix well and let sit for at least 15 minutes (note I did this before work and let it marinate all day)
- Wilt the spinach with EVOO in a large skillet - I actually used the whole container since spinach wilts down so much! Set aside to cool
- In a large baking dish - I used my large rectangular cast iron - lay the marinated chicken
- Layer on top of the chicken in this order: softened cream cheese, spinach, then mozzarella
- Bake for about 35+ minutes at 400 degrees - can be paired with rice or a side veggie!
