Ingredients:
- 16 oz. bowtie pasta, cooked and set aside to cool (orzo or macaroni would work too)
- 1.5 cups corn (I used a can of corn, not creamed!)
- 1.5 cups cherry tomatoes, halved lengthwise
- 0.5 small red onion, chopped (you could slice as well)
- 2 tbsp. cilantro, finely chopped
- 1 avocado, diced (can use 2)
- Cotija cheese, crumbled
Dressing:
- 0.5 cup plain greek yogurt
- 0.25 cup fresh lime juice
- 0.25 cup cilantro, roughly chopped
- 2 garlic cloves
- 0.5 tsp salt
- 0.125 (1/8) tsp cayenne
Directions:
- make the dressing, mixing all ingredients in a food processor to blend until smooth...cover and store in the fridge. You can do this well in advance of your cookout!
- in a large bowl, toss the pasta & veggies, saving the avocadoes and Cotija cheese. Mix in the salad dressing
- When serving, top each bowl with the avocadoes and cheese
