Ingredients:
- 1-2 large sweet potatoes, peeled and cut into 1 inch cubes
- 2 tablespoons honey
- 2 tablespoons olive oil
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
NOTE: since the mahi mahi had to be cooked at 425 for 18 minutes, I popped the potatoes in with them – not like the directions listed…and tasted wonderful!
