My basil has been growing like crazy, as I do have two pots growing on my lanai! With so much of this herb on hand, I have been scouring Pinterest and my cookbooks/magazines for pesto and basil recipes. The other day I made a Mediterranean flatbread pizza (I will add picture at the bottom!) and tonight I made Grilled Pesto Shrimp Skewers. Now if you are like me and have a husband who isn’t a huge pesto fan, just sprinkle salt & pepper on his skewers and brush with EVOO

Thread about 6 medium sized shrimp onto each skewer. If you are using wooden skewers like I do, make sure to soak them for about 30 minutes before threading so they won’t burn on the grill! Grill over medium-high heat until cooked, about 2-3 minutes per side
