- 1 pint strawberries
- 1/2 bag dark chocolate chips
- 8 oz. cream cheese
- 2-3 tablespoon powdered sugar (to your sweetness preference)
- 2 tsp vanilla extract
- 3 tbsp dark chocolate cocoa powder
- 1-2 tablespoon milk
- Whipped cream (I used a can of redi-whip...easier!)
- Sliced almonds (optional)
OMG these are amazing! My friend Shannon hosted a Pinterest Party, so I decided to bring this as one of my items and we ate the whole plate within minutes :) If you have a party, you must make these...or easier, just invite me! ~ Cut the bottoms off of the strawberries, so the strawberries will be able to stand up. Next core the strawberries. Warm up the chocolate chips in the microwave, in 20 second increments, so that the chocolate becomes smooth. Lay a piece of parchment paper on a cookie sheet, and then dip the strawberries in chocolate and place on the paper; also, if desired, dip the almond slices in chocolate. Put the cookie sheet in the freezer for a few minutes (at least) so the chocolate hardens. While the chocolate is in the freezer, mix together the rest of the ingredients and whip until there are no lumps. Scoop the mix into a icing back - since I don't own one, I cut the corner of a ziplock back and put an icing tip (from the Publix baking aisle) in it to make my own icing bag. Fill the inside of the strawberries with the mixture and then put back in the fridge. When you are ready to serve, put a dollop of whipped cream on each one and top with a chocolate covered almond!
