Ingredients:
- 1 can Rotel (I used the one with green chiles)
- 1 block cream cheese (softened if possible)
- 1 lb bulk sausage
I also added red pepper flakes and S&P to kick it up a notch, but thats optional! You can also use hamburger meat or diced tomatoes....
Directions:
1. Preheat the oven to 350 degrees. Cook the meat (can be done ahead of time!) according to the directions, draining excess grease. Add in the rotel and cream cheese (plus any desired spices) and mix together until the mixture is creamy/melted.
2. Cut the peppers - I did mine bu just coring/cutting the tops off and leaving them whole; you can also half the peppers.
3. Stuff mixture into peppers and bake for about 10 minutes...I just kept an eye on them to ensure they didnt start to burn/turn brown.
