Ingredients:
1 box Pillsbury refrigerated pie crusts, softened (I found them with the biscuits near the cheese in Publix)
1 1/2 cups frozen Publix mixed veggies
1 tbsp. butter
1/2 medium yellow onion, chopped
1/2-3/4 lb lean ground beef (I used 93/7)
1/3 cup low sodium beef broth
1/4 tsp Kosher salt
1/8 tsp freshly ground pepper
Mashed potatoes (I made my own...you will need about 3 cups worth)
* Heat oven to 400 degrees and then unroll the pie crusts. Cut 6 rounds out of each pie crust, at least 4 inch diameter each. I used a JAX Jags cup to make the rounds as I didn't have a circular cutter...make sure it's at least 4 inches! Press each round into a muffin tin...ungreased. Bake 7-10 minutes until lightly browned.
* If you are making your own mashed potatoes, you may want to have them boiled before you cut the rounds, and be mashing them (with butter, cream/milk, and S&P) while the meat cooks)
* Microwave the veggies on high for 2-3 minutes, in a safe bowl with 2 tbsp. water and tight plastic wrap over the top. Add the veggies to the meat mixture.
