Ingredients:
I box healthy harvest whole wheat pasta (uncooked)
1-2 jars sauce (I like the chunky vegetable sauce)
1 container part-skim ricotta
I bag of mozzarella cheese
I package chopped frozen spinach - thawed and drained
1-2 peppers - chopped finely (I had green but any kind works)
Fresh garlic - minced - amount is your discretion (I used 3-4 cloves)
2 eggs
1 lb lean ground beef
Parmesan cheese
S&P to taste
While the sauce is cooking, mix in a medium bowl the ricotta, 1/2 bag of mozzarella, 2 eggs, spinach, peppers, and Parmesan (I just sprinkled some in).
Layer in a large glass pan (I don’t know the size of mine but it’s bigger than 9x13) some of the meat sauce, followed by a layer of the noodles (not cooked!!!). Then add some more meat sauce, followed by 1/2 the cheese mix and layer of noodles. Repeat three layers. Finally layer on remaining sauce and then top with the final 1/2 bag of mozzarella cheese and some Parmesan on top. Bake on 350 for 45 minutes.
