Ingredients…put all in in your crockpot for about 3-4 hrs on high (or 7-8 hrs on low). I prefer the ‘low’ setting so I can start it before work and it’s ready when I return!
- 1 roast chicken (I buy the already-cooked one from Publix…7 bucks!). Pull apart chicken - can save the bones and make homemade broth
- 1 can black beans, drained
- 1 package of frozen corn
- 2 cans diced tomatoes (I like the ones with garlic/onions or other flavors)
- 1 cup salsa (I used the medium Newmann’s)
- 2 cans chicken broth (the low-sodium type)
- 1 tbsp cumin
- 1-2 tsp minced garlic
- salt & pepper to taste
