Tomato Basil Chicken (makes 3-4 servings)
Ingredients:
- 2 chicken breasts (use ½ breast for each serving, unless you are starvin’…)
- Salt & pepper (freshly ground) and Italian seasoning
- I added some fresh oregano from my garden…use what you have!
- 2 tbsp EVOO
- 2 cups of fresh cut ‘on the vine’ tomatoes
- ½ cup fresh basil, cut into strips
- 1+ tbsp freshly minced garlic (I like to do 2 tbsp, but I am a garlic fiend!)
- 4 tbsp unsalted butter – cold
- Parmesan flakes…I sprinkled about ¼ cup (your call!)
