½ tbsp. baking powder
½ cup sugar
1 cup flour
¾ tsp ground cinnamon
¼ tsp salt
1 egg
½ cup milk
2 tbsp butter
1 large apple
Preheat oven to 400°F; Combine all dry ingredients in a large mixing bowl. Combine all liquid ingredients, eggs, milk, and butter. Pour liquid ingredients into the dry and mix until dry ingredients are moistened; Fold in the chopped apples. Fill muffin tins ¾ way full. Sprinkle the top with the streusel topping. Bake for 20 minutes or until a toothpick has been inserted into the center and comes out clean.
Streusel Topping
1/8 cup sugar
1 ½ tbsp flour
1/8 tsp cinnamon
1 tbsp butter
~ Combine flour, sugar, and cinnamon in a mixing bowl or food processor; Add the butter and mix or pulse until the topping resembles a course crumb.
