Bacon Cups
- get one package of bacon and cut the slices in half or in thirds, depending on how big you want the cups (recipe states 3” long). flip upside-down a mini muffin tin; place the bacon pieces crisscross over the cups, afterwards press a mini muffin liner on top to retain shape. Bake to desired crispiness on 350…I do about 1 hour (make as many cups as desired…I made 24
- This is not your traditional deviled egg as its going in a bacon cup! take 6-8 eggs and hard boil, then cool & shell. Add eggs, 1/4 cup mayo, 2 tbsp dijon mustard, 1 tsp white wine vinegar, plus desired amount of salt, pepper and cayenne to a food processor and blend until smooth. Spoon into bacon cups and garnish with paprika - if you want to be a little fancier than me, put the egg mixture into a plastic bag/frosting bag to add into cups.
