Ingredients:
* 2 lbs potatoes, peeled
* 1 tbsp butter
* 1/3 cup fully cooked bacon pieces
* 2-3 cloves garlic, chopped fine
* 4-6 cups baby spinach leaves...amount to your preference (I used 4)
* 1 tub Philly Onion & Chive cream cheese tub
~ while the potatoes are boiling, melt the butter in a medium sauce pan on medium/medium high heat. Once melted, add in the bacon and garlic to brown....cook for about 2 minutes. Add in the spinach and cook for 2 more minutes until the spinach is wilted. Add the cream cheese into the mashed potatoes and stir together until fully integrated. Then mix in the spinach/bacon mixture...serve and enjoy!
