Ingredients:
- 1.5 cups quick oats
- 1 cup skim milk
- 1/2 cup light brown sugar
- 2 tbsp. sugar or honey (I used sugar)
- 1/2 cup unsweetened applesauce
- 2 egg whites
- 1 tbsp. vegetable oil
- 1 tsp vanilla extract
- 1/2 cup flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 cup fresh blueberries

* When you get up in the morning, take a food processor or chopper and pulse/chop the oats a little. Then mix the milk and oats together and let sit for about 30 minutes.
* Preheat the oven to 400 degrees, line a 12 cup muffin tray with liners and a bit of baking spray.
* In a medium size bowl, mix sugars, apple sauce, egg whites, oil and vanilla. In another bowl, mix the dry ingredients (flour, salt, baking soda, baking powder).
* Fold in the oat mixture into the sugar bowl, mixing well. Secondly add the dry ingredients to the bowl; once all these ingredients are combined, gently fold in the blueberries.
* Spoon the mix into the muffin tins, bake for about 22 minutes. Let cool for a bit and enjoy!
