Chicken and Veggies…sara-style (makes 4 servings)
- sauteed 4 thin cut chicken breasts in a little bit of EVOO with spices (I used a lemon pepper with some garlic)
- 2 cans fire-roasted tomatoes, 2 yellow squash & 1 zucchini (chopped) with a mixture of garlic and spices. Heat in a large saute pan for about ten minutes on medium. When serving, sprinkle some parmasean cheese on top
