And now for the highlighted recipe, White Chocolate & Apricot Scones
Ingredients
3 c. all-purpose flour
2 1/4 c. cake flour
3/4 c. sugar
3 tsp salt
6 tsp baking powder
1 1/2 c. white chocolate chips (Ghirardelli are great!)
3/4 c. dried apricots, diced
12 oz. unsalted butter
1 1/2 c. half & half
Baking sheet with parchment paper
~~ Preheat the oven to 350. Sift together: flours, baking powder, and salt, and then whisk in sugar. Cut the butter into the flour mix until butter reaches the size of large peas. Mix in the white chocolate chips and apricots...use yours hands! Add 1/2 & 1/2 until the batter becomes sticky.
Depot the dough onto a baking sheet lined with parchment paper. Spread out the dough to form a circle, about 1 inch thick; score the dough about 3/4 way through. Sprinkle top of scones with sugar if desired and then bake 10-12 minutes - scones should be a light golden brown. Cool before cutting into 12 pieces!
