I am only posting one of the recipes here, but if you want the others, just hit me up! PS - I posted the other pictures of food & recipes at the bottom of this post :)
(PS - I could have eaten the whole bowl of this mixture...)
Ingredients:
1 baguette, sliced on the diagonal 1/2 inch thick
1/4 c EVOO
Salt & Pepper
1lb thick cut applewood smoked bacon, diced
1 large shallot, diced
2 (4 oz) lobster tails, diced
1 small head iceberg lettuce, finely shredded
1 large tomato, seeded & finely diced
1 cup mayo
2 tsp tarragon, chopped
~~Preheat your grill to high (or grill pans...I want one. Jerome...Christmas? I'm just sayin'......). Lightly brush your bread pieces with EVOO, and sprinkle S&P; place on grill and lightly toast, until you have light grill marks - remove and set aside.
In a large saute pan on medium heat, render the fat from the bacon, and cook until crispy; drain the grease and reserve. Place the saute pan back on the stove with 2 tbsp of the bacon grease, and cook shallots for 2 minutes. Add the diced lobster and cook for another 2+ minutes. Remove the lobster and cool completely.
In a mixing bowl still bacon, lobster, lettuce, tomato, mayo and tarragon...season with S&P as desired. Place a small amount of filling on each slice of baguette; garnish with chives if wanted (like in picture)
Promptly devour :)
