Ingredients:
8 oz. frozen shredded hash browns, thawed
1/2 cup cheddar cheese, shredded
1/2 tbsp EVOO
4 eggs
S&P to taste
2-3 slices cooked bacon, crumbled (and one to eat LOL!)
1 tbsp cheddar cheese, shredded
1/2 tbsp parsley
1 avocado, sliced & chilled
~ Mix the hash browns, S&P, 1/2 cup cheddar, EVOO in a mixing bowl. Grease the muffin tins (only 4); divide the mixture into the tins and press to sides/bottom to form the 'nest'. Bake at 425 for about 15 minutes, or until the edges are browned.
~ Crack an egg in each nest, top with bacon and the 1 tbsp cheddar and parsley. Bake at 350 for 13-16 minutes; let cool before removing!
