Honey-Glazed Chicken:
- 3 chicken breasts, halved (so they are thinner)
- 2 tbsp EVOO
- 2 tbsp honey
- Salt & pepper to taste
- 1 ½ lbs small red potatoes, quartered
- 2 tbsp fresh rosemary, minced
- 1 tbsp Dijon mustard
- 1 tbsp EVOO
- 1/3 cup panko bread crumbs
- Salt & pepper as desired
