Ingredients:
4 tilapia filets
lemon juice - I use all the juice from one lemon
3 cloves garlic, chopped finely
salt & pepper to taste
white wine - I used about 1/2 glass of Pinot Grigio
about 16 cherry tomatoes, halved
about 2-3 tbsp capers
crumbled feta cheese...amount as you desire!
~ make four tinfoil packets for the fish, making sure that to curl the edges up so that the sauce wont leak out; lay each filet inside. Mix together the S&P, garlic, lemon juice and white wine and then pour over each filet. add the capers to the mix. Grill for about 5 minutes on medium heat, or until the fish is no longer glassy looking (should turn white). Add the feta & tomatoes on top and grill for 1-2 additional minutes.
