Ingredients:
3 tbsp. butter
3 tbsp. flour
2 tsp. salt
Freshly ground pepper
2 cups 1% milk (I added a dash of 1/2 & 1/2 as well!)
1 cup+ shredded cheddar - more is better!
5 cups thinly sliced potatoes (make sure to peel them first!)
Directions:
Peel the potatoes & turn the oven to 350. In a 3 quart dutch oven (or a stove top pan), turn to medium high heat and melt the butter....you are going to make a roux. Add the flour and stir constantly for about 1-2 minutes until smooth. Slowly add in the milk and keep stirring until the consistency thickens. Remove the pan from the heat and stir in S&P and cheese until it is melted.
~ Now if you are using the dutch oven, add the potatoes in, making sure they are all covered. Then throw it, covered, into the oven.
~ If you are using a pan, get a oven-safe dish that is at least 2 quarts; add sliced potatoes to the dish and add on top the mixture. Cover and put into oven.
Bake the potatoes for about one hour; after the hour, remove cover and continue to bake for about 30 minutes, or until the top has a golden-y brown color. I recommend letting it cool for a few minutes before eating....unless you really want to gobble it down and burn your mouth!
