Ingredients:
5-6 slices of thick french toast bread, cut into cubes
7 large eggs
2 cups milk
1 tsp vanilla extract
1 1/2 tsp pumpkin pie spice
1/2 cup pumpkin puree
4 tbsp brown sugar
chopped pecans
~ Cut cubes of the bread and lay in a 9x13 slightly greased pan. IN a large bowl, whisk the milk, eggs, vanilla, pumpkin spice and pumpkin puree. Pour over the bread…soak overnight. In the morning, preheat over to 350. Sprinkle the brown sugar and nuts over the top and back for 35-45 minutes. Serve with maple syrup and/or whipped cream.
