Ingredients (serves two):
1 acorn squash
2 tbsp butter (I used unsalted and it needed a little salt at the end...)
1/8 cup brown sugar (I used dark)
sprinkling of nutmeg to your desire
~~ Preheat the oven to 425; half the squash lengthwise and scoop out the seeds & strings. Place the halves of squash cut side down in a 9x9 pan, and cover with tinfoil - roast for 30 minutes. After the 30 minutes, take the dish out of the oven, turn the squash right side up, and top each half with butter, sugar, and nutmeg. Return to dish and cook for additional 30 minutes.
