Ingredients:
6 oz uncooked pasta (makes about 3 cups cooked)...we chose a whole grain rotini
1/4 tsp kosher salt
1 tsp EVOO
8 oz uncooked hot Italian turkey sausage, casings removed
1 small onion, chopped
4 cloves garlic, minced
8 cups (give or take) spinach
3/4 cup chicken broth (I had chicken stock on hand so we used that)
14.5 oz canned diced fire roasted tomatoes
1/2 tsp crushed red pepper flakes
1/4+ cup parmesan cheese
Cook pasta according to directions on the box. Heat oil on medium-high in a large skillet. Add the sausage and onion, breaking up the sausage into smaller pieces; cook for about 5 minutes. Add the garlic, broth and spinach, stirring until the spinach is tender (about another 5 minutes). Stir in the tomatoes and red pepper for about a minute. Spoon the sauce over the pasta, and toss to coat. Sprinkle the cheese on top and Voila!
